Bran Muffins
Ingredients:
1 c. whole wheat flour
1/2 c. all purpose flour
1/2 c. bran flakes
1 tsp baking soda
1/4 tsp salt
1/2 to 3/4 c, chopped dried apples, apricots, cherries, dates, prunes, or raisins.
1/3 c. chopped nuts
1 egg, beaten
1-1/4 c. buttermilk
1/2 c honey
1/4 c. butter or margarine, melted
Directions: Preheat oven to 350°. Grease 12 – 14 muffin pan cups; set aside. Place whole wheat and all purpose flour and bran flakes in a large bowl. Add baking soda and salt. Stir. Add dried fruit and nuts. Mix to coat well with flour mixture. In a med. bowl, mix egg, buttermilk, honey and melted butter. Pour all at once into flour and fruit mixture. Stir only until moistened. Fill muffin pan cups 3/4 full. Bake in preheated oven for 20 – 25 minutes.
Makes 12 – 14 muffins
