Apple Salad
Ingredients:
2 large apples, cored but unpeeled and cut into chunks
2/3 c. crushed pineapple, drained (or fresh pineapple, minced), juice reserved
1/3 cup celery, diced
2 TBS raisins
3 TBS plain low fat yogurt
2 tsp mayonnaise
1 TBS pineapple juice
1/8 tsp cinnamon
Directions: This great apple salad is lighter than most apple salads, thanks to yogurt. Peel the apples only if you think they need In a medium bowl, combine the apples, pineapple, celery and raisins. In a small bowl, combine the yogurt, mayonnaise, pineapple juice and cinnamon and blend with the fruit mixture.
