Apple Chutney Pork Chops
Ingredients:
Nonstick cooking spray
1 tsp vegetable oil
4 4oz or 5oz boneless pork loin chops, well trimmed
1 cup chopped onion
3 minced garlic cloves
1 large tart green apple (Granny Smith), cored and diced
3 TBS cider vinegar
1/4 c. honey
1/4 c. currants or raisins
Directions: In a large nonstick skillet coated with cooking spray, heat oil and brown chops on both sides over med heat, about 2 min per side. Remove and keep warm. Add onion and garlic to pan. Cook & stir until lightly browned, about 3 minutes; add apple. Cook and stir until soft and liquid has evaporated, about 3 minutes. Add vinegar and deglaze pan. Stir in honey and currants; season to tase with salt and pepper. Return chops to pan; spoon chutney over chops. Cook until chops are cooked through and glaze is syrupy, about 5 minutes.
Makes 4 servings.
